I visited ‘Britain’s oldest salmon curers’ at 7.15 am. The business stands very close to the new Olympic stadium. I went down to the factory floor where the fish were being prepared and recorded the sounds of fish slicing, then went through some automatic opening plastic curtains to the packaging area. Everyone was very hard working and efficient, it was as if I was moving around a computer game, observing and recording up close without being noticed. The owner of the family business was Lance Forman who talked a little about the history of the business and mentioned the fact that they were forced to move from their newly built factory after only 2 years to make way for the Olympic site.
