There is a large, grand building near Bethnal Green tube called Town Hall Hotel. It looks like Buckingham Palace has been air lifted and dropped in the middle of the East End. Inside the buildingĀ  is a restaurant called Viajante, lead by renowned Portugese chef Nuno Mendes. Nuno’s Viajante is only one of two Michelin star restaurants in East London. Nuno could have set up the restaurant anywhere he wanted but chose East London because that is where he lives and he is proud of the East End.

I visited the bustling kitchen below and recorded sounds of chopping, mixing de-boning and many others. One of the Sous chefs Chris took an interest in what I was doing and we chatted a little…
